I have set my e-mailer (Firefox) to keep mail on the server for two days after downloading, so I have ample time to recover accidentally deleted items, and yet the server doesn't get clogged as everything older than 48 hours AND already downloaded is erased. Dunno if such a setting is possible on other mail software.
