Hi Joel, I see others finally answered your question without getting hung up
on software. Yes used Shure SM58s are good.  Also I could recommend
Audio-Technica mics, the quality you want are around $150 each.  A mixer
that plugs directly into USB can be had from several suppliers for $100 or
so.  You don't need to go to tape, recording via the interface gives as qood
a quality as that interface.
