You can do it in Photoshop. Select the label using the circular  
selection tool; copy; then create a new document with a transparent  
background and paste in the label. Save, preserving transparency (I  
think you can save that way only in certain formats like TIFF, but  
don't recall at the moment).

When I scan labels, I include the dead wax where things like matrix  
and take numbers live. YMMV.
